Crunchy chocolate almond peanut butter bars
Ingredients
- 1 cup peanut butter (mine was homemade with no sweetener added)
- 2-3 tbsp extra virgin coconut oil
- 2-3 tbsp of maple syrup
- ¼ cup shredded coconut
- ½ tsp vanilla extract
- ½ cup chocolate chips or chunks
- Pinch of pink salt or sea salt
- ½ cup of chopped almonds
- ¼ cup of flax seeds or flax seed mix (my mix had chia and hemp as well)
- 2 tbsp of cacao nibs
Directions

Whisk together peanut butter, coconut oil, maple syrup, salt and vanilla until well incorporated and smooth

Fold in the dry ingredients- chocolate chips, almonds, seeds, cocoa nibs and shredded coconuts until well incorporated into peanut butter mix

Line a loaf pan with parchment paper and spread the mixture evening pressing it down and smoothing it out where needed

Top with some more chocolate chips, almonds and cocoa nibs and freeze for a couple hours to set, and then keep refrigerated until ready to cut into bars for serving.
