How to have your lentils (and eat them too)
Lentils or ‘fakes’ (pronounced fak-yas) in Greek and ‘fasolatha’ (Greek White Bean Soup) were the worst things you could feed me as a kid. I loved the smell of them cooking but could not stand to eat them. I mean really could not stand them. My mom pleaded and threatened but I wouldn’t budge. I would have rather starved than even have one bite. Finally my mom had to resort to bribery and succeeded in getting me to have a few resentful bites. Nutella was the answer to her problem child who wouldn’t eat legumes — the only thing I wouldn’t eat I should add. I wasn’t a picky eater — just no legumes. So she would put out the Nutella jar and set it on the counter and the rules were a few bites of fakes/lentils and then Nutella or else nothing at all.
I don’t know what it was I hated about them. Probably the mushy texture of legumes. Nevertheless her persistence paid off because I can’t have enough of them now. We have them at least once a week in my home. I make them ahead and add them to my salads or to my quinoa for lunch or make them into patties (vegan burgers). I love them curried with potatoes over rice and I love them in soups. They are truly very versatile and very hard to mess up, and if your thinking of a frugal meal to make, this is your ticket. They are very inexpensive!

This soup recipe is an easy one that always hits the spot. It’s a no fail recipe, also one that you can swap and add ingredients according to taste.
