Easy Chicken Piccata
Chicken piccata is a delicious classic Italian chicken dish. Tender chicken cutlets are sautéed and served with a tangy lemon-butter sauce. It takes 20 minutes to make and can be paired with just about anything. Fancy enough for a dinner party but simple enough for a midweek dinner.
What does piccata mean?
The word piccata is actually a method of preparing food. That method is simple and it involves a thin cut of meat (traditionally veal) which is sliced, coated/dredged in flour, sautéed and served in a delicious sauce.
What is piccata sauce?
It’s one of my favorite sauces as I love lemony butter sauces. The sauce’s bright, briny, and buttery flavors work well with veal and chicken the most common meats it’s made with but it’s also great with fish. This recipe combines wine, lemon juice and slices, broth and capers in a pan, they simmer away until reduced slightly then garlic and butter are added to make this sauce extra silky and delicious.
How do you make chicken piccata?
The description in the name really helps us appreciate how this delicious dish is made. A chicken breast is butterflied or sliced along its width. It can be flattened with a tenderiser if the pieces are thicker than you want. Traditionally it is seasoned and dredged in flour before being browned in butter or olive oil or a combination of both. The sauce is made using the pan drippings. Lemon juice and white wine are added and reduced. Shallots or garlic are often added along with capers and slices of lemon. After the sauce has reduced butter is stirred in to finish it off. What is not to love about that. I decided to make my version flourless using Bob’s Red Mill Super-Fine Almond Flour. I have often had chicken or salmon rusted with almond meal or crushed almonds so I thought I would try almond flour for dredging the chicken in. It worked beautifully as a flour replacement for this chicken dish.
I have also made it with a combination of almond flour and Parmesan cheese. It’s absolutely delicious with the cheese but you have to be careful with the heat as the cheese tends to burn easily. Bob’s Red Mill Super-Fine Almond Flour is a great way to coat or crust chicken or any meat. It’s something I normally have stocked and great not only for baking but also in savoury recipes like this. The almond flour worked really well at making this a gluten free recipe plus adding a little extra texture to the crust of the chicken.
What can I serve with chicken piccata?
It is usually served with a pasta, polenta, or rice but I love it with mashed potatoes or mashed cauliflower. The sauce over the chicken and the mash is wonderful. In the summer I love to serve it with grilled veggies or a hearty salad to keep things lighter. I can’t resist the sauce and I think that you might not be able to either especially if you love a lemony butter sauce like I do. Enjoy!

- 1½ lbs of chicken breast sliced in half lengthwise (usually you end up with 4-6 pieces)
- 1 large lemon plus extra for serving
- 2 large eggs
- 1¼ tsp of salt divided
- ½ tsp ground black pepper divided
- ¾ cup Bob’s Red Mill Super-Fine Almond Flour
- 3 tbsp butter divided
- 2 tablespoons extra-virgin olive oil or vegetable oil of choice
- 1 garlic clove, minced
- ½ cup white wine
- ½ cup chicken stock
- 3 tablespoons capers, drained
- 2 tablespoons chopped parsley and extra for garnish
Slice the lemon in half - juice one half and slice the other half in slices and set aside
In a medium shallow bowl whisk the almond flour with ½ teaspoon salt and ¼ teaspoon pepper.
In a separate medium bowl whisk the eggs with remaining ½ teaspoon salt. Dip each chicken cutlet in the egg, letting any excess drip back into the bowl, then coat the chicken with the almond flour.
In a large heavy skillet, heat the oil and 2 tbsp of the butter over medium/high heat. Add the chicken and brown it, turning once, approx 5 to 6 minutes total. Transfer the chicken to a plate and cover with foil to keep warm
Reduce heat to medium then add the garlic to the skillet and cook, stirring, until golden, 1 minute.
Stir in the wine, stock, capers, lemon juice, sliced lemons and spices and ¼ teaspoon each of salt and pepper; boil until the sauce is reduced by half. Whisk in the remaining tbsp of butter until combined, then return the chicken to the skillet and let it gently cook through, about 2-3 minutes. Sprinkle the chicken with the parsley and serve with extra lemon wedges.
