Berry season is one of the best excuses to bake all Summer long. This collection brings together 14 of my favorite berry desserts — pies and pie bars, cobblers, and cheesecake bars and cakes — so whatever you’re craving, you’ll find it here.Whether you want a classic pie for a special occasion or an easy cobbler you can throw together in 15 minutes, there’s a recipe for every level of effort. Many of these freeze well or can be made a day ahead.
Section 1 — Pies & Pie Bars
There’s nothing quite like a berry pie fresh from the oven — but if you’re short on time, the pie bar versions give you all that flavor in an easier, shareable format. Classic full pies are great when you want something special, and the bar versions like strawberry rhubarb and blueberry are perfect for potlucks and easy to slice and serve. The Mixed Berry Crumble Slab Pie is a blog favorite and we get it — a big-batch crumble-topped pie that feeds a crowd.

Section 2 — Cobblers
Cobblers are the most forgiving, comforting way to use up a big batch of fresh berries (although many of these recipes work with frozen berries too) — minimal prep, maximum payoff, and best served warm with a scoop of ice cream. This section offers a “choose your berry” approach: strawberry, blueberry, blackberry, or a mixed berry version for when you want a little bit of everything. Serve warm with vanilla ice cream or any of my homemade no churn ice creams like my no churn cherry, blackberry, apricot, strawberry cheesecake, or peach ice cream. Check out my no bake recipes.
Section 3 — Cheesecake Bars & Cakes
For when you want something a little more elevated — these baked cheesecake bars and cakes bring berries together with rich, creamy bases. We love a good lemon blueberry combo so we have it in cheesecake form and in bars too - it’s one of the most beloved flavor combinations of summer. The Vanilla Sponge Cake with Berries and Cream rounds out the section as a lighter, more classic option.

TIP: Most if not all of these recipes can be made ahead cause they need time to set making them the perfect make ahead dessert. The Sponge cake can also be made ahead and assembled closer to when you would like to serve it.
