Apple Blondies
These apple blondies are chewy, moist, full of apple spice and caramel flavor with diced softened apples. The ultimate fall apple dessert that is simple to make and one we think you will be making batch after batch. There is no need to pre-cook the apples. They get diced into small apple chunks and folded right into the thick blondie batter along with butterscotch chips giving these an amazing apple caramel flavor. They are buttery, fudgy and chewy with slightly crisp edges - just what a blondie should taste like. No cakey blondies here!
Apple Blondies Recipe Ingredients
- BUTTER: Unsalted butter is what we use and melted. If you would like more flavor you could brown the butter but be sure to measure it after it is browned (as some evaporates while it simmers and browns) and add more melted butter if needed to make a full ½ cup butter (melted).
- SUGAR: Brown sugar is all you need for sweetness and moisture. Feel free to use light brown sugar or dark brown sugar. We love the deep flavor that dark brown sugar gives these
- FLOUR: We use all purpose flour here and have not tested these with any other flour.
- VANILLA: A splash of vanilla is always a good idea for sweet baked goods. We usually use pure vanilla extract.
- SPICES: We love to use Ground cinnamon and a blend of apple pie spice. If you do not have apple pie spice you can substitute it with a variety of warming spices - we suggest ½ teaspoon extra ground cinnamon, ¼ teaspoon ground nutmeg, and 1/8 teaspoon ground allspice or cardamom for 1 tsp of apple pie spice. If you prefer to keep things simple just with a little extra cinnamon that is fine too.
- APPLES: We like to use a tart crisp variety of apples in our baked goods like granny Smith, gala or honey crisp, but really any variety will work here.
- BUTTERSCOTCH CHIPS: Ok we think these are essential but technically you can make these blondies without them but we love the texture and caramel like flavor they add to the bloodies. Is there a better combination of flavours for apples and cinnamon?!? If you do not have them you can omit or substitute with Caramel chips, toffee bits, cinnamon baking chips, or white chocolate chips. The texture and flavor won’t be quite as exact but will still add that sweet creamy flavor to the blondies
How To Make These Easy Apple Blondies:
- Prepare Pan & Preheat Oven: Line 8x8 baking pan with parchment paper with overhanging edges for easy removal. Preheat oven.
- Whisk Together Flour & Spices: Whisking helps combine everything but it also helps aerate it, and breaks up tiny clumps
- Whisk Butter & Sugar: Whisk the warm butter with the brown sugar until combined then whisk in the vanilla and egg until nice and smooth and creamy.
- Mix Dry Into Wet Ingredients: Add the flour mixture into the butter mixture and stir gently until just combined with some streaks of flour remaining
- Fold In Apple & Chips: Using a spatula gently fold in the apple chunks and the chips (batter will be thick) until combined and no streaks of flour remain.
- Bake: Transfer thick blondie batter into prepared pan and smooth it out
- Cool, Slice & Enjoy: Bake until lightly gold around the edges and toothpick comes out clean with a few moist crumbs but not wet batter.
Apple Blondies Storage & Freezing
- STORAGE: Store cooled apple blondies in an airtight container at room temperature for 1-2 days maximum. Because fresh apples add moisture, refrigeration is recommended for longer storage so transfer them to the fridge after 1-2 days for up to another 2-5 days (1 week from baking) to keep the fresh apples from spoiling. They will not last that long so you won’t have to worry about this anyways!
- FREEZING: Freeze blondies for up to 1 month by wrapping individual bars in plastic wrap or layering them between parchment paper in a freezer-safe container or bag. Thaw in the fridge overnight and enjoy chilled or room temperature.

Ingredients
- 1¼ cup all purpose flour
- ½ teaspoon apple pie spice
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- ½ cup unsalted butter, melted
- 1 cup brown sugar, packed
- 1½ teaspoons vanilla extract
- 1 large egg, room temperature
- 1 cup diced apples (approx ¼ inch small dice), from approx 2 medium apples, peeled, cored
- ⅓ cup butterscotch chips plus more for sprinkling over batter
Directions
- Pre-heat oven to 350°F and line an 8x8 pan with parchment paper with overhanging edges or grease with cooking spray.
- In a medium size bowl whisk together the flour, cinnamon, apple pie spice and salt until combined.
- In a separate mixing bowl, whisk together warm melted butter and brown sugar until combined. Then whisk in the vanilla extract followed by the egg until thoroughly combined and glossy.
- Add dry ingredients into wet, and stir gently until everything comes together with some streaks of flour remaining.
- Gently fold in the chopped apples and butterscotch chips into the batter using a spatula and that should take care of any remaining streaks of flour. The batter will be quite thick.
- Transfer the batter into the prepared pan and smooth out the top so the batter reaches the edges of the pan. Sprinkle some extra butterscotch chips over top of the batter, pressing them into batter a little.
- Transfer pan to preheated oven and bake 25-30 minutes or until a toothpick inserted in the center comes out clean with a few moist crumbs but no wet batter.
- Allow blondies to cool completely in the pan on wire rack, then slice into 9 or 12 squares and enjoy!
Recipe Notes
- For more flavor you could brown the butter - if you decide to do so make sure to measure browned butter and add more melted butter if needed to get a full ½ cup.
- Feel free to add 1 tsp baking powder if you prefer your blondies with more lift. We never add it cause we like how chewy these apple blondies are.
