There is something about the shift into autumn that makes me want to spend a Sunday afternoon with something bubbling on the stove. It is soup season and we are here for it! The smell alone — onions and garlic softening in olive oil, herbs warming through, a slow-building broth — is inviting and cozy. These are the soups I keep coming back to once the weather turns and are fan favorite soups: deeply flavoured, genuinely warming, and the kind of thing that gets better the next day.

The flavours deepen significantly after a night in the fridge, and they all reheat beautifully on the stove top. Make a big pot on Sunday and you are set for the week.
Which soups freeze well?
Most broth-based and bean soups freeze beautifully. The Split Pea and Ham Bone, Black Bean Soup, Lentil, Fasolada, and any of the minestrones are all excellent freezer candidates. Soups with cream, pasta, or tortellini are better eaten fresh as the texture changes once frozen. For those, refrigerate and eat within three to four days.
